This exceptional coffee originates from the Guji Hambela region in Oromia, grown at high elevations ranging from 1,800 to 2,200 meters above sea level. It undergoes a specialized "Supernatural" process featuring a two-stage anaerobic fermentation that yields an intensely fruity profile and remarkable complexity.
The process begins by fermenting whole coffee cherries in sealed, low-oxygen tanks for up to 72 hours, unlocking rich sugars and aromatic compounds. The cherries then undergo a second anaerobic fermentation in airtight containers to further deepen the coffee's sweetness and flavor dynamic. Finally, the cherries are dried on raised beds for 21 to 27 days—significantly longer than standard Ethiopian natural processing—which concentrates the flavors and delivers a truly distinctive cup.
The result is a rich, beautifully balanced cup featuring vibrant notes of ripe mango and dark berries, complemented by a full, creamy body and a lingering chocolate finish.
